    Dear family,

    Dublin Coddle is not heard of much here in America.

    It is basically layers of potatoes, bacon, sausage, carrots, and onions.

    I am of Irish heritage and I love making recipes that help celebrate that!

    Embracing and celebrating your heritage through traditional recipes is a fantastic way to connect with your roots and share your cultural heritage with others.

    Any ethnic recipe can be both delicious and meaningful.

    This is a very simple, filling dish and very tasty!

    Ingredients:

    • 1 lb  pork sausages
    • 1/2 lb bacon slices, chopped into pieces
    • 2 large onions, sliced
    • 2 cloves garlic, minced
    • 2 large potatoes, peeled and sliced
    • 2 large carrots, peeled and sliced
    • 2 cups chicken or vegetable broth
    • Salt and pepper to taste
    • Fresh parsley, chopped (for garnish)

    Instructions:

    1. In a large skillet, cook the sausages over medium heat until browned on all sides. Once cooked, remove the sausages from the skillet and set aside.

    2. In the same skillet, add the chopped bacon and cook until browned and crispy. Once cooked, remove the bacon from the skillet and set aside, leaving the rendered fat in the skillet.

    3. Add the sliced onions to the skillet with the rendered fat and cook over medium heat until softened and translucent, about 5 minutes. Add the minced garlic and cook for an additional minute.

    4. Layer half of the sliced potatoes and carrots in the bottom of a large slow cooker. Top with half of the cooked sausages, bacon, and onion mixture. Repeat the layers with the remaining potatoes, carrots, sausages, bacon, and onions.

    5. Pour the chicken or vegetable broth over the layers in the slow cooker. Season with salt and pepper to taste.

    6. Cover the slow cooker and cook on low for 6-8 hours or on high for 3-4 hours, or until the potatoes and carrots are tender and the flavors have melded together.

    7. Once cooked, serve the Dublin Coddle hot, garnished with chopped fresh parsley.

    This slow cooker Dublin Coddle is a hearty and comforting dish that's perfect for a cozy dinner on a chilly evening. Enjoy it with crusty bread or Irish soda bread for a traditional Irish meal!

    Here is a post, from a recipient of what we do,.

    L**** and I were one of the precipitants of This mission. She is right. My parking was 9 per day for 3 months. Then on top of that food cost me approximately 15 per day. That was cheap - I got vouchers for $5.00 per meal. So somedays I did not eat or made meals last for more then one meal. Had to. Parking was $810. Food was $1,300. Then you have normal household bills and I have 3 animals I had to pay to have people come and take care of them. At first I had my dog in the Kennel for 1/2 the time. That was about 500. It is VERY expensive to have a sick child. That was Just ONE hospital stay. We have had numerous ones. Some only a few days, some a week or two. Without their help we would of gone fully under!

    From providing necessary funds to actually having families stay with us...we DO what we say we do!
