    Dear family,

    Straight from the pantry, this dinner is a breeze to prepare and comes together effortlessly while the pasta cooks.

    With simple pantry items, such as canned goods, pasta, and basic seasonings, you can create a delicious and satisfying meal in no time.

    Relying on your pantry staples ensures that you can enjoy a homemade meal needing to run to the store (remember the pandemic?)

    The pantry approach to cooking allows you to make the most of what you have on hand, resulting in a flavorful dish that's both convenient and comforting.

    Ingredients:

    • 8 ounces pasta (such as rotini, penne, bow ties, shells, or fusilli)
    • 1 can (5 ounces) tuna, drained
    • 1 cup canned peas, drained
    • 1/4 cup mayonnaise
    • 2 tablespoons lemon juice
    • 2 tablespoons chopped red onion
    • 2 tablespoons chopped celery
    • Salt and pepper to taste
    • Optional: Chopped fresh parsley for garnish

    Instructions:

    1. Cook the pasta according to the package instructions until al dente. Drain and rinse under cold water to cool the pasta completely.

    2. In a large mixing bowl, combine the cooled pasta, drained tuna, canned peas, chopped red onion, and chopped celery.

    3. In a small bowl, whisk together the mayonnaise and lemon juice until well combined.

    4. Pour the mayonnaise mixture over the pasta and tuna mixture. Toss everything together until evenly coated.

    5. Season the salad with salt and pepper to taste. Adjust the seasoning as needed.

    6. Cover the bowl with plastic wrap and refrigerate the tuna pasta salad for at least 30 minutes to allow the flavors to meld together.

    7. Before serving, give the salad a final toss. If desired, garnish with chopped fresh parsley for added freshness and color.

    Here is a post, from a recipient of what we do,.

    L**** and I were one of the precipitants of This mission. She is right. My parking was 9 per day for 3 months. Then on top of that food cost me approximately 15 per day. That was cheap - I got vouchers for $5.00 per meal. So somedays I did not eat or made meals last for more then one meal. Had to. Parking was $810. Food was $1,300. Then you have normal household bills and I have 3 animals I had to pay to have people come and take care of them. At first I had my dog in the Kennel for 1/2 the time. That was about 500. It is VERY expensive to have a sick child. That was Just ONE hospital stay. We have had numerous ones. Some only a few days, some a week or two. Without their help we would of gone fully under!
